● 250 ml coconut milk
● 2 tablespoons Potato starch
● 2 heaping tablespoons of yeast flakes
● 1/2 teaspoon baking powder
● 1/2 teaspoon garlic powder
● 1 tsp Organic onion powder
● A handful of finely chopped fresh parsley and thyme (optional)
● 1/4 tsp Organic peppers
● 1/4 tsp Organic kale powder
● a pinch of cracked black pepper (optional)
● 1/2 tsp smoked salt to taste

1. Preheat the oven to 180 ° C and place baking paper on your 20 x 20 cm baking pan. This will prevent the frittata from sticking to the pan.
2. Whisk all dry ingredients (potato starch, pea powder, baking powder, yeast flakes, salt, pepper and spices) in a large bowl until everything is well mixed.
3. Add the coconut milk and whisk again until the batter is smooth.
4. Add the grated zucchini and fresh herbs (if used) and mix thoroughly with a spoon.
5. Pour your batter into the baking pan and put it in the oven for 35-40 minutes. Once the top is slightly golden and slightly cracked, test it by pricking the frittata in the middle with a knife. If it comes out clean, it's done!
6. Let them cool and cut the frittata into slices.
7. The frittata can be kept in the refrigerator for 5 days.

  7. You can store this in an airtight container in the fridge, and have them as healthy snacks (up to 5 days).
